Why this one
Chewy makhana is not stale. It is small.
This is the most common complaint about fox nuts and the least understood.
Makhana pops because water inside the seed flashes to steam under heat. A seed that pops fully expands into an open, airy structure with very little dense material left at the centre. A seed that pops incompletely keeps a dense core — and a dense core cannot be dried out by roasting, because the outside crisps long before heat reaches the middle.
So you get crunchy edges and a chewy centre, and more pan time only burns it. The grade decided that outcome before you opened the packet.
6+ suta
Makhana is graded by the diameter of the popped kernel, in a unit called suta. 6+ is roughly 24mm and up — the largest routine grade, and the one that crisps the whole way through.
Most retail packs are 4 suta.
Bihar
Almost all of the world's makhana comes from the ponds of the Mithilanchal belt — Darbhanga, Madhubani, Purnia, Katihar. The seeds are lifted from pond beds by hand, sun-dried, graded, roasted in hot sand, and then struck one at a time so the black shell splits and the white kernel pops free.
It is among the most labour-intensive foods in the Indian pantry, and it is invisible in the price of a supermarket packet.
Roast it dry first
Heavy pan, medium-low, no oil at all for the first five to seven minutes. Toss often. You are listening, not watching — raw makhana lands soft and muffled, then starts to rattle as it dries.
Only then add a teaspoon of ghee, off the heat, and season. Ghee at the start traps moisture and gives you a browned outside and a soft middle. This is the single most common mistake.
Keeping them
A starch sponge with enormous surface area — it pulls moisture from the air fast. Airtight jar, ideally with a silica sachet, cool dark cupboard. Never the fridge: it is humid, and condensation forms every time you take the jar out.
If it softens, five minutes in a dry pan restores it completely. Do not throw it away.
