The shell is the best packaging ever made

Nothing in a food factory improves on it. A walnut shell is opaque, sealed, and oxygen-limiting, and it holds a kernel in good condition for six months at room temperature while a shelled kernel is fading in two.

That is the whole argument for buying in-shell. You are not paying for the shell. You are buying the clock it stops.

36+, and why it matters more here

The grade counts whole halves in the lot. Higher whole-half percentage means less cut surface, and less cut surface means slower oxidation of a fat that is ~70% polyunsaturated and highly prone to it.

In-shell, the grade tells you something extra: it reflects how carefully the nut was dried. Over-dried walnuts go brittle and shatter on cracking. Under-dried ones grow mould. A consistent 36+ lot is evidence of controlled drying to around 3–4% moisture, not a tarpaulin in the sun.

Chilean, and off-season by design

Chile's April harvest is six months out of phase with the northern crop, so through the second half of the year this is the fresh walnut on the Indian market. Cool nights and dry ripening give a pale, low-tannin kernel — sweet rather than sharp.

The part worth having

Cracked at the table, eaten the same minute. That is the freshest a walnut is ever going to be, and no packaging reaches it.

Store the shells somewhere cool and dark. Six months at room temperature, a year in the fridge.
