A shell that opened on its own

Pistachios split naturally when the kernel grows large enough to force the shell apart on the tree. That gape is a maturity signal you can see before you taste anything — it means the nut filled out properly.

Shells can also be split mechanically after harvest, which produces the same look on a nut that never earned it. The tell is the edge: a natural split is smooth and follows the seam, a mechanical one is straight and slightly ragged.

Never bleached, never dyed

This is the part of the category worth knowing about.

Pistachio shells are commonly whitened with hydrogen peroxide, because a uniform pale shell photographs well and hides staining from harvest handling. The older trick was dyeing them red for the same reason — to cover blemishes.

Neither is done here. What the shell looks like is what the harvest looked like, which means some variation in tone. That is what an untreated shell is supposed to look like.

Iran and America

Two origins, deliberately, because they are genuinely different nuts.

Iranian pistachios are more intensely flavoured with a thinner shell — the ones with the deep, almost sweet-savoury character. American pistachios run larger and more consistent, with a cleaner profile and reliable grading.

Bold grade from both. Roasted, then lightly salted — enough to lift the flavour, not enough to be the flavour.

Keeping them

Around 45% fat, so the usual rule applies: airtight, dark, away from the stove. Three months at room temperature, nine refrigerated.

In the shell they keep considerably better than shelled kernels, which is a good reason to buy them this way and shell them as you eat.
