Why this one
The raisin that answers back
Angoori is the small, round, seedless green variety, and it is sharper than the long golden Malayar raisin most people picture.
That acidity is the point. A sweet raisin disappears into a pulao or a kheer. This one holds its own against spice — you still find it after cooking, tart against the richness, instead of dissolving into background sugar.
What to look for
Translucency. A good angoori kishmish is still slightly see-through, with a faint green cast. Opaque, leathery raisins are old and have lost moisture unevenly.
Give. They should be soft and pliable. Hard raisins have been over-dried or sat too long.
No stickiness between them. Excessive clumping usually means added sugar syrup or glycerine, used to make tired stock look plump.
Seedless, and what that means
Grown from a seedless grape variety, so there is nothing to remove and nothing gritty in the bite. The skin stays thin, which is why they soften quickly in soaking and cooking.
Using them
In pulao, kheer, halwa and sheera, where the sharpness cuts sweetness. Soaked in warm water for twenty minutes before adding to cooked dishes so they plump rather than pull moisture out of what surrounds them.
Straight from the pack, a small handful is a reasonable snack — around 100 calories, with useful iron, potassium and fibre. It is concentrated fruit sugar, so a handful is a handful, not a bowl.
Keeping them
Do not refrigerate — condensation makes them sticky, then mouldy. Airtight, cool, dark cupboard: around six months, halved once opened.
