Why this one
Gone by the handful
Soft-crisp rather than hard, faintly sweet, and genuinely difficult to stop eating. Sunflower is the least demanding seed on this list — no soaking, no grinding, no method.
What it carries
The densest vitamin E on our shelf: around 35mg per 100g, well over twice an adult's daily requirement in a modest handful. Vitamin E is fat-soluble and sits in cell membranes protecting their lipids from oxidative damage, and sunflower seeds are a considerably cheaper route to it than almonds.
Also selenium, magnesium, and about 21g protein per 100g.
Raw and unsalted, deliberately
Sunflower seeds are around 51% fat and mostly polyunsaturated, which makes them among the fastest things in the pantry to go rancid.
Salted-roasted sunflower seeds are very often older stock whose flavour is being covered. Salt and roast are the two most effective ways to hide a seed that has started to turn, which is exactly why the commodity version of this product is nearly always both.
Raw and unsalted has nowhere to hide. If it tastes flat or sharp, you will know immediately — and that is the point.
The freshness test
Fresh sunflower kernels are pale cream to light grey, plump, and smell mildly nutty. Yellowing at the tips means age. Any bitter or paint-like note in the aftertaste is oxidised fat, and roasting will not rescue it.
Using them
Over a salad, into a loaf or granola, through a raita, or straight from the pack. A light dry-roast for three minutes lifts them considerably if you want them warm — add salt after.
Around 30g a day is reasonable; they are calorie-dense and disappear fast.
Keeping them
Airtight, dark, cool. Three months at room temperature, six refrigerated. Once open, halve it.
