Walk into any Indian grocery and the jaggery on display will be a clean, even, golden-yellow. It looks like what jaggery is supposed to look like.
It is not. Sugarcane juice, boiled down honestly, does not produce that colour. It produces something between dark amber and near-black, uneven in tone, with a faint mineral bitterness underneath the sweetness. The golden block is golden because somebody made it that way.
What gets added, and why
Making jaggery means boiling sugarcane juice until the water leaves. The juice arrives at the kettle carrying field debris, cane fibre, soil and plant proteins. As it heats, that material rises as a dark scum.
Traditionally you skim it off. Skimming is slow, it costs labour, and it takes some of the sugar with it. So most commercial units clarify chemically instead.
Sodium bicarbonate is the mildest and most common. It shifts pH, helps impurities coagulate and rise, and lightens the colour. In small amounts it is not dangerous — baking soda is baking soda. The problem is that it is dosed by eye, at scale, by people paid for throughput.
Sodium hydrosulphite — sold as hydros powder — is the real issue. It is an industrial bleaching agent, used in textiles and paper. It strips colour aggressively and produces that uniform bright yellow in a single step. It is not a permitted food additive for jaggery. It is used anyway, widely, because it is cheap and it works and the finished block sells for more.
Superphosphate is sometimes added alongside, as a clarifying aid.
The colour you have been trained to read as "good jaggery" is, more often than not, the signature of the third one.
What honest clarification looks like: bhindi
There is an older way to do this, and it works.
Boil down okra — bhindi — and you get a thick, slippery mucilage. Stir a small quantity of that juice into the heating cane juice and it behaves like a net. The mucilage is a long-chain polysaccharide, and as it disperses it binds to the suspended proteins, fine soil and cane fibre in the kettle, aggregating them into clumps heavy and cohesive enough to rise as a single scum layer that can be lifted off cleanly.
That is the same job sodium bicarbonate and hydros do. The difference is what stays behind. A chemical clarificant strips colour along with the impurities, taking the molasses fraction — the iron, the magnesium, the potassium, the flavour — with it. Okra mucilage lifts the dirt and leaves the minerals, which is why bhindi-clarified jaggery comes out dark rather than golden.
It is slower, it costs more labour, and it yields slightly less per batch. Those three facts are the entire reason the industry moved to hydros.
Other traditional clarificants work on the same principle — sukhlai or deola bark, castor, wild okra. All are plant mucilages. None of them bleach.
If a producer tells you their jaggery is chemical-free, the useful follow-up is: then what do you clarify with? A real answer names a plant. A vague answer names nothing.
Does chemical-free jaggery taste different?
Yes, and it is the easiest thing to verify yourself.
Chemically clarified jaggery is flatly sweet. It dissolves into tea and adds sugar and nothing else. That is the entire flavour event.
Unbleached jaggery carries what the cane and the soil put into it — a smoky, slightly caramel depth from the long boil, a mineral edge from the iron and potassium that were never stripped out, and a faint bitterness at the finish that people who grew up on real gud recognise immediately and people who did not sometimes mistake for a defect.
It is not a defect. It is the molasses fraction. It is where the minerals live.
Four tests you can run at home
Colour. Dark brown to almost black is the honest range. The darker the block, the more molasses stayed in, and the more iron, magnesium and potassium came with it. Bright, even yellow is a warning, not a feature.
The dissolve test. Drop a piece in a glass of water. Real jaggery sinks and dissolves slowly, leaving faintly cloudy water. If it fizzes, floats, or throws a chalky white sediment to the bottom, you are looking at added chalk powder or bicarbonate residue.
Texture. Pure jaggery is hard, and it fractures — it breaks with a clean edge rather than crumbling. Excessively soft, sticky, or grainy-crystalline jaggery usually means either added sugar syrup or high moisture, and high moisture means it will grow mould.
Taste. Sweet first, then a short savoury-mineral finish. A sharp chemical bite, or a salty note, means additives.
Run the dissolve test once with a supermarket block and once with a good one. The difference is not subtle.
Jaggery vs sugar: an honest comparison
Jaggery is marketed as a health food. It is not one. It is sugar with company.
Per 100g, jaggery is roughly 97% sucrose and glucose. Refined white sugar is 99.9%. Your blood glucose does not draw a fine distinction between the two, and jaggery's glycaemic index sits in the 60s — lower than white sugar's ~65, but not by a margin that changes anything for a diabetic.
What jaggery has that white sugar does not is the ~3%: iron (roughly 11 mg per 100g in unbleached gud, though it varies enormously with soil and processing), magnesium, potassium, and trace B vitamins. That iron content is the basis for the traditional association between jaggery and post-partum recovery, and it is real — but you would need to eat an unreasonable quantity of jaggery to meet an iron requirement from it.
The sensible framing: if you are going to use a sweetener, unbleached jaggery is a better one than refined sugar, because it brings minerals and flavour rather than only sweetness. It is not a licence to use more of it.
And the entire argument collapses if the jaggery has been bleached, because bleaching is specifically the process of removing the 3% that made it worth choosing.
Slab or powder?
Functionally identical — the difference is handling.
Slab (gud) keeps better. Less surface area means less moisture pickup, which matters through the monsoon. It is what you want for tea, for chikki, for eating a piece after a meal. You will need to chip it, which is part of the ritual and mildly annoying.
Powder dissolves instantly and measures cleanly, which makes it the practical choice for baking, for sweetening a drink, for anything where you need a spoon rather than a shard. It absorbs humidity faster, so keep it in a sealed jar.
Buy slab if you use jaggery daily in tea. Buy powder if you cook with it.

Storing jaggery so it lasts
Jaggery's enemy is humidity. It is hygroscopic — it pulls moisture out of the air, goes sticky, and then grows a white fuzz that people mistake for sugar bloom but is usually mould.
Keep it in an airtight container, in a dark cupboard, away from the stove. Through July and August, refrigerate it. A slab kept properly holds for a year; powder for six to eight months.
If a white powdery bloom appears and smells of nothing, it is sugar crystallising and is harmless. If it is fuzzy, coloured, or smells fermented, discard the block.
Frequently asked questions
Is dark jaggery always chemical-free? No — darkness is a strong signal, not a guarantee. Some producers add caramel colour to imitate it. Combine the colour check with the dissolve test and the taste test; all three together are hard to fake.
Can diabetics eat jaggery? Treat it as sugar. The GI is marginally lower and the minerals are a genuine addition, but the carbohydrate load is nearly identical. Anyone managing blood glucose should discuss quantity with their doctor rather than treating jaggery as a free swap.
Why does my jaggery have small black specks? Usually cane fibre or caramelised sugar from the kettle floor — normal in hand-made jaggery and, if anything, evidence it was not filtered chemically. Uniform grey or metallic specks are not normal.
Is organic jaggery the same as chemical-free jaggery? Not automatically. "Organic" certifies how the cane was grown — no synthetic pesticides or fertilisers in the field. "Chemical-free" refers to what happened at the boiling kettle. Jaggery can be organically grown and still bleached. Check for both.
